How to choose Dark Chocolate: Choose dark chocolate which contains mostly cocoa powder, and cocoa butter. (i.e. Make sure cocoa powder and butter are the first two ingredients). Avoid any chocolates which use partially hydrogenated oils, milk, and milk fat.

How to store Dark Chocolate: Store dark chocolate in a cool-dry place. Between 60-68 degrees Fahrenheit (15-20 C). Avoid storing dark chocolate in the freezer or fridge as this can damage its flavor.

Taste: Dark chocolate has an intensely fragrant taste, is somewhat sour, astringent, and melts in your mouth. It pairs well with coffee, and green tea.
