Lentil Soup
| This is a hearty soup that is great for cold winter days, but can also work in summer. The amount of lentils you use is optional. 1/2-2 cups is recommended. Additional ingredients include 4-5 cloves of garlic, one onion, two carrots, celery, and spinach. |
Step 1: In a large soup pot add enough water to cover the bottom and set to high heat.

Step 2: Next peel and cut the onion, garlic, carrots, and celery to let them simmer.

Step 3: After 5 minutes you can no add the lentils. Rinse the lentils 2-3 times to be sure to remove any dirt or sticks which may have gotten in. Fill the soup pot to 3/4 full (depending on how thick you want the soup, and add the 1/2 - 2 cups of lentils.

Step 4: To spice the soup you can also add several bay leaves and some cinnamon. Let the soup come to a boil, but do not cover it yet as some foam will rise.

Step 5: After the foam from the lentils has boiled away, add a lid and turn the heat down to medium low. Let it cook for 30 minutes.

Step 6: The lentils should now be cooked, add the spinach and any other vegetables you like. Let them cook for 5 minutes. Now is also a time to add spices, black pepper or red chili powder both work well.

Step 7: Your lentil soup is now done. Enjoy it with a nice piece of toast!
