Swiss chard is a great source of potassium, magnesium, and even calcium. This recipe is a great way to make a hearty meal from Swiss Chard and rice. Packed with nutrients it is a nice alternative dish that can feed 4-6 people. |
Total Preparation and/or Cooking Time: 45 Minutes |
Step 1: Gather all your ingredients: 1 bunch of Swiss Chard, 3 green (spring) onions, 1-2 tomatoes, 1 onion, 4 cloves garlic, 1/4 cup chopped parsley, 1/4 cup chopped cilantro, 1 small lemon, olive oil, 1 cup rice, salt, black pepper, dry ground coriander, ground cumin, and ground cinnamon. |

Step 2: Get a cutting board and dice the green onions, parsley, garlic, onion, cilantro, and some onion. |

Step 3: Next wash 1 cup of rice, and add 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp dry ground coriander, 1/2 tsp ground cumin, and 1/2 tsp ground cinnamon. Mix this together with all the diced ingredients from the step before, and then set it aside. |

Step 4: Next wash your Swiss Chard and remove the stems. Blanch the Swiss Chard by placing the leaves in boiling water for 2-3 seconds. |

Step 5: Then place them in a basin of ice-water directly, so the leaves do not become frail. |

Step 6: Next add 1 tablespoon of olive oil to a medium size pot, and cut the tomatoes to cover just the bottom of the pot. |

Step 7: Next line the Swiss Chard leaves along the bottom of the pot. |

Step 8: Place Swiss Chard leaves until the bottom of the pot is completely covered and the leaves line the side of the pot. |

Step 9: Next add the rice mixture to the pot. |

Step 10: Fold the leaves over the rice. |
|
Step 11: The rice should be completely covered, and you can add extra leaves to the top of the dish if necessary, or to use any extra you have. |

Step 12: Place a ceramic plate on the top of the dish, to add weight and help the ingredients pack together. Also add 2 and 3/4 cups of water to the mixture, cover with a lid, and set the heat to medium. When the water starts to boil, turn the heat down to low, and wait 15-20 minutes for the rice to cook. |

Step 13: Once the rice is cooked, carefully remove the lid and the plate. Warning, the plate will be hot, so use tongs and oven gloves! Place your serving dish on top of the pot. |

Step 14: Using oven gloves or towels to protect your hands from the heat, flip the pot over and let the Swiss Chard wrapped rice drop to the plate. |

Step 15: Cut and serve with salad or lemon, for a healthy, vitamin filled, meal. |
