Lima beans have a creamy texture often earning them the name Butter Beans. They are a great source of vitamin C and potassium, and an excellent plant source of iron and protein. For this recipe you will need two cups of fresh lima beans (frozen will work too), one onion, and about 2 table spoons of balsamic vinegar. It will serve 2-4 people. |

Step 1: Gather your ingredients and be sure to give the lima beans a rinse. |

Step 2: Add water to a sautee pan and set it to high heat, while the pan is heating dice the onion. |

Step 3: Add the onions to the hot pan. |

Step 4: Once the onions have cooked for about 3-5 minutes add the lima beans and stir. Let the lima beans sautee for 5 minutes and then add 1 cup of water, cover the pan, and turn the heat down to low. |

Step 5: After 15-20 minutes the beans will be cooked, turn off the heat and add the vinegar, you can also add 1-2 tea spoons of black pepper. |

Step 6: Enjoy lima beans as a side next to rice or a baked sweet potato. |
